DAY 20 –Total Calories 1200
BREAKFAST -260 calories
- Plain Oatmeal with 3 tbsps. of raisins and a dash or two of cinnamon for flavor
SNACK -150 calories
- 8 ounce or 12-ounce non-fat cafe mocha (leave out the whipped cream topping)
LUNCH -331 calories
- Quesadillas With Chicken and Goat Cheese
1 1/2 oz goat cheese
1 onion chopped
1 small can of corn
1 small green or red pepper cut in pieces
1/2 cup diced cooked chicken breast (white meat)
1 small bunch of fresh cilantro chopped
1/2 cup of shredded low fat cheese of choice
1 package corn tortillas
In a small bowl, mix together 1 1/2 ounces of fresh goat cheese and then set the bowl aside.
Heat a bit of olive oil in a medium to large frying frying pan and then saute the following ingredients over medium-low heat.
First, add the onion and then saute for 2 minutes. Add the corn and green or red pepper slices; saute for around 1 minute.
Add 1/2 cup of diced and cooked skinless chicken breast.and saute for 2 minutes.
Remove the pan from heat, and then stir in 2 tbsps of chopped fresh cilantro.
Divide the cheese mixture and then spread it over 2 six inch yellow corn tortillas.
Layer each of the tortillas with half of the chicken mixture and then top with the remaining tortillas.
Next, Spray a big frying pan or a large griddle with some cooking spray. Warm the tortillas over low heat or alternately pop them in the oven for minutes
at 350 F. to warm thorough.

- Broiled chicken with rice & green beans -481 calories
Broil 1 3 oz boneless and skinless chicken breast and spray with a little bit of olive oil. Next season it with some chopped garlic, a sprinkle of
dried rosemary or 2 tbsps chopped fresh rosemary. Sprinkle with pepper and salt to flavor.
1 cup of green string beans that have been boiled in some slightly salted water for 3 minutes, then drained, and drizzled with 1 tsp. of olive oil,and seasoned with salt & pepper again to taste.
Serve with 1/2 cup brown or basmati rice
