DAY 18 –Total Calories for today’s 1200 calorie diet plan is about 1199.

BREAKFAST -378 calories

3/4 cup scrambled tofu (175 calories) with tomatoes and fresh herbs and half cinnamon roll (75 calories)
1/2 grapefruit (freebie)

Drink with 8 ounces of canned or fresh pineapple juice (128 calories).

SNACK -70 calories

8-ounces of V8 juice

LUNCH -192 calories

Three small deviled eggs with sliced beefsteak or grape tomatoes, a few snipped chives, or some olive slices.

To make deviled eggs:

Boil the eggs and then scoop out the egg yolks. Stir in a bit of mayo to taste with some mustard, pepper and salt and a bit of paprika.

Press the mixture through a medium-sized sieve into a bowl.

Next, garnish with a few sliced olives, or some sliced tomatoes, finely chopped green or red onion, or a handful of snipped fresh chives.

Enjoy with 2 or 3 whole wheat crackers.

DINNER -559 calories

Ravioli with Leek & Hazelnuts

To Make:

Cut the leeks in half lengthwise; cut thin slices crosswise to make about 4 or so cups.

In a small saucepan, heat a small amount of margarine or butter and cook the leeks and garlic, then season with salt and pepper, stirring occasionally, or until the leeks are tender and starting to brown, for about 10 or 12 minutes.
In a saucepan of boiling salted water, cook a package of ravioli according to the package directions; drain, but reserving 1/2 of a cup cooking liquid.

Gently stir the ravioli and some of the reserved cooking liquid into leek mixture to coat. Top this with goat cheese, some hazelnuts and a few chives.

Drink – sparkling water with lemon wedge (0 cal)
