Cornflake Crunch French Toast


  • 2 eggs
  • 3 tbsps. low-fat milk
  • 1 tsp. vanilla extract
  • 1 cup corn flakes
  • 2 slices whole wheat bread
  • maple syrup or pancake syrup
  • fresh berries of choice

Mix 2 eggs, low-fat milk, vanilla extract and ,corn flakes and soak 2 slices of whole-wheat bread in mixture then sizzle in frying pan. Have with maple syrup and choice of fresh fruit.


SNACK -99 calories total

  • 1 Oatmeal cookie (57 cal)
  • 1 miniature box of raisins (42 cal)

Chorizo Sausages & Cannellini Bean Salad -338 calories


  • 1 chopped onion
  • chorizo sausage
  • 2 tbsp. olive oil
  • 1 celery stalk
  • 1/2 green or red pepper
  • 1 small can of cannellini or other beans
  • 1/2 cup canned tomatoes
  • fresh parley
  • 1 bottle French light dressing
  • crusty bread

To make:

Fry some onion and a sliced or crumbled up chorizo sausage for a few minutes in 2 tsp, olive oil. Put 1 chopped stick of celery, 1/2 green or red pepper, 1 small can of beans, 1/2 cup can tomatoes and a few parsley leaves in a bowl and then pour in the chorizo and 4 tbsp., light French dressing.

Serve with crusty bread.



Stir-Fried Sesame Tofu With Baby Bok Choy -260 calories


  • 1 1/4 cup sliced bok choy
  • 3 tbsp. chopped shallots
  • 1 tsp. sesame oil
  • 1/3 cup extra firm tofu
  • 3 tbsp. teriyaki sauce
  • 3 tsp. of grated fresh ginger
  • 1 cup cooked rice noodles
  • sesame seeds

To make:

For 3 minutes stir-fry 1 1/4 cups sliced baby bok choy and 3 tablespoons sliced shallots in 1 teaspoon sesame oil.
Add 1/3 cup sliced or cubed extra-firm tofu, 3 tbsp teriyaki sauce and 3 tsp grated ginger;
cook, stirring frequently, 3 to 5 minutes.
Toss with 1 cup rice noodles and toasted sesame seeds.

Drink of choice –Island Limeade -122 calories

  • Mix water, freshly squeezed lime juice and sugar to taste.

Dessert -1 square dark fudge brownie -85 calories
