BREAKFAST – 258 calories total
- Oatmeal with Apples, Hazelnuts, and Flaxseed
- 16 oz oatmeal
- 8 oz. fat-free milk
- A few hazelnuts,
- 1 chopped granny smith apple,
- tsp. of ground flaxseed,
- cinnamon to taste
- 1 tsp. vanilla extract
- 1 tbsp.brown sugar
- a few slivered almonds
Make Oatmeal according to package instructions using milk instead of water for the liquid. Or you can use water to make the oatmeal and drink the milk as your drink of choice instead. Once the oatmeal is cooked to your desired consistency, add chopped apples, hazelnuts, flaxseed, cinnamon, vanilla extract, brown sugar and slivered almonds and stir.
SNACK – 104 calories total

LUNCH -372 calories total
- Herbed Cheese & Tomato Sandwich with lettuce
In blender puree 6 oz low fat cottage cheese and then add (for flavour) 1 small chopped garlic clove, 1 tsp. of chives, salt and pepper to taste. Next, spread mixture on 1 whole-grain bagel or bun with 4 slices tomato and lettuce.
DINNER -425 calories total
- Buffalo Meatloaf and Spinach with Roasted New Baby Potatoes
- 1 pound of ground buffalo or ground beef.
- 4 chopped mushrooms
- 1 chopped onion
- 1/2 tsp. sage
- 1/2 tsp. thyme
- 1/4 cup tomato sauce
- 1/2 red pepper chopped
Sautee mushrooms and onion until mushrooms are beginning to brown and onion is translucent; mix in sage, thyme, 1/4 cup of the tomato sauce and the red pepper and pour this mixture over the top of the ground meat. Place in an oven proof glass dish and roast the meatloaf in the oven for 45 minutes on around 350 F.
Serve the with roasted new or mini potatoes and steamed spinach as a side dish.
